Today on Subscribing to Wellness we are joined by Kathryn Shah, the founder behind, Spring & Mulberry, the first company to craft chocolate bars sweetened with dates.
After Kathryn was diagnosed with an aggressive form of breast cancer in her early thirties, she underwent treatment and cut out inflammatory sugar from her diet, after discovering research that indicated sugar could fuel tumor growth. Still wanting to enjoy sweets & celebratory occasions, she began experimenting with ingredients in her kitchen - cacao, dates, and dried fruits and nuts - these simple ingredients eventually served as inspiration for what she envisioned as a beautiful, sugarless dessert that anyone could enjoy and everyone would love.
